Weghorst received the ball on the halfway line following a pass forward by Stefan de Vrij.
He had Nathan Collins pressuring him but the 31-year-old showed his strength to hold off the centre-back.
Weghorst let the ball run beyond him and then found a burst of pace as he sprinted beyond the Irish defence.
The Burnley star currently on loan at Hoffenheim remained composed and powerfully finished beyond Gavin Bazunu.
Weghorst now has eight goals in 28 games for Holland.
He has netted three in 11 matches for Hoffenheim this season.
This comes after his torrid time on loan at Man Utd last term.

Weghorst suffered a goal drought, scoring just twice in 26 games for the Red Devils.
None of his strikes for United came in the Premier League.
The club decided not to make the loan deal permanent and fans were left scratching their heads in amazement at the quality of his goal for Holland.
One said: “Where was this when he was at Old Trafford?”
Another added: “Bring him back to United.”
A third reacted: “Fantastic from big Wout.”
